This is a Sauvignon Blanc with lusciousness and complex aromatics.

It’s an interesting wine (in a good way), made from a single vineyard in Steels Creek (Northern Yarra) with a little skin contact and wild barrel ferment. The fruit for this wine was picked, crushed, then cloudy juice was fermented by wild yeasts in two 500L French oak barrels (50% new). Extended contact with yeast post-ferment has helped in giving this wine its generosity.

Think guava, gunflint and lime, finishing with oyster shell like saltiness. Delicious.

Made from 100% Sauvignon Blanc, the resulting wine, Le Clos, is elegant, pure and precise. Light and bright in texture, this fruity wine has juicy green fruits, sliced apple and a cut of grapefruit acidity. A herbal element is balanced by the warmer notes of apricots.
