Nathalie Falmet Cuvee Brut NV

The current ‘Cuvee Brut’ is made from 50% Pinot Noir, 30% Chardonnay and 20% reserve wines. This is the only vintage made from an assembly of reserve wine mostly from vintage 2014. This intriguing Champagne reveals tons of brilliance in a focused, powerful style. Vinification: 100% in thermo-regulated stainless steel vats. Harvest: 30% solera and 70% 2014 harvest. Dosage at disgorgement: 4 to 5 g / L

Bailly Lapierre Cremant de Bourgogne Reserve NV

Bright, easy drinking, fresh and cheerful. Balance is the hallmark of Bailly Lapierre Crémants: from the bedrock... yet finely chiselled, carrying you away with their intense, mineral freshness. All the wines are aged and nurtured in the ancient cellars under the town of Bailly which is the birthplace of Cremant de Bourgogne.

The Apogee project has had several objectives, the main is it produce traditional method sparkling that rivals Champagne. Others are to demonstrate how the latest knowledge of terroir can pin-point great sites and to show that single site sparklings can produce the best wine."

If there’s a man that knows his way around a bottle of sparkling it is Dr Andrew Pirie. The 2015 Deluxe Vintage Brut is the fifth vintage of his Apogee ‘retirement project’, keeping himself in and out of mischief after a lengthy career creating the big names of Tassie sparkling such as Pirie with Tamar Ridge and an assortment of bubbles at Pipers Brook.

On the nose, the wine showed notes of fresh lemon juice, honeycomb, sourdough pastry and white blossom but not much more. However, as it warmed up, the true complexity began to show. Soft, ripe peaches, freshly buttered brioche, ripe lemon zest still warm from the tree, vanilla, toast and layers of crushed oyster shell and sea spray.

A blend of 45% Pinot Noir, 49% Chardonnay and 6% Pinot Meunier all hand-picked from the tiny vineyard on the East Tamar and whole bunch pressed. Around 10% of base wines were fermented in old oak casks to increase the complexity of the wine.

This is a mere baby. If you’re smashing back oysters straight from the sea, this would work a treat right now but it will also keep itself tidy as time lets the savoury elements shine through.

Sparkling wines shine in this Terroir Pack! 

Bailly Lapierre Cremant de Bourgogne Reserve NV comes from the vineyards around Bailly in Burgundy. A blend of Pinot Noir and Chardonnay this is fine-boned, refreshing and long. There’s genuine finesse of fruit flavour and acidity at play making for the perfect sparkling aperitif.

Apogee “Deluxe” Brut 2015 hails from Andrew’s hand-picked vineyards not too far from Pipers River. This 2015 vintage is light gold with fine mousse and a suitable foamy collar when poured. Aromas range from bready, yeasty overtones through to perfumed red fruits and lemon-rind with a faint salty oyster-shell character which is part of our terroir. For a sparkling the wine is full-bodied on the mid-palate thanks to the cool climate pinot noir component but the cool climate chardonnay ensures a lean and fresh finish.

Champagne Nathalie Falmet Cuvee Brut is made entirely from the vineyards in the Cotes de Bar in the south of Champagne. It’s made of 50% Pinot Noir, 30% Chardonnay (both 2011) and 20% Reserve (from a Soléra started in 2009). Its refined aromas of bright fruits migrate to a very light and delicate first palate. This champagne is dry (dosage: seven grams per liter) and firmly structured, but really fine and elegant, and provided with a good length and subtle mineral flavours.
