A journey into modern (ancient) winemaking techniques. These six are all classified as natural or low intervention wines, they use techniques such as wild yeast ferments, skin contact, whole bunch, no fining or filtering, bio-dynamic & or organic farming, low to no sulphur, varying fermentation vessels e.g clay, concrete or stone & oxidative handling. Why do they do this, I mean why make wine making so difficult? The point, their aim, is to allow the grapes to express their truest form without any modern synthetic help. The results are textured, rustic &  true! 

Julien Sunier "Wild Soul" Beaujolais Village 2017

90 Points, William Kelley, The Wine Advocate, "A 2,000-bottle cuvée produced from purchased organic grapes, the 2017 Beaujolais-Villages Wild Soul exhibits a spicy bouquet of raspberries, cassis and sweet soil. It’s medium to full-bodied, rich and chewy, with a dark, sapid core of fruit. A touch of dissolved carbon dioxide lends freshness but likely also amplifies the perception of tannin; Sunier noted that he retained more gas than usual to compensate for the wine’s comparatively low acidity. It’s a tasty, giving Beaujolais-Villages that will drink well out of the gates."

Clos Troteligotte "K-or" 2017

Emmanuel paints the "K" on the K-or label here red because he cherishes the "bloody" aromas this wine gives off upon opening. this 100% Malbec is rich with a dusty tannic character. It has black-currant flavors that are packed with both fruitiness and balanced acidity. The organic grapes give a pure line of ripe fruits that are going to integrate well with the tannins.

K-Or is the most obviously mineral wine in Emmanuel's line-up. Grapes are harvested early for appellation standards and fermented/aged in unlined concrete squares.

 

Moorooduc Estate Gris on Skins 2018 (pink)

Moorooduc's notes, "Watermelon pink in colour with pink rose petals, violets, fennel and hints of pickled ginger, rhubarb and red plums. Tangy red berries and Moroccan spice on the palate. Fresh and crunchy with just the right amount of tannin to clean the palate. Drink cool, not cold, with a platter of smoked charcuteries and soft cheese, or match to sushi, sashimi or a serve of steamed prawn dumplings."

(like red wine, this wine will throw a tannin deposit, and it is not cold stabilised (‘natural’ winemaking!) so if you do put it in the fridge it can produce ‘wine diamonds’ (tartrate crystals) – this is natural and not harmful in any way – so don’t worry!)

BK Wines Skin n Bones Pinot Noir 2019

Fermented in big old concrete vats using 100% whole bunches to add freshness. This is pretty to smell. It’s fresh & high-toned with orange peel, spices, sour cherries, mulberries & just keeps showing layers of fruit. Love the tannin structure; it’s almost gamay-like, Beaujolais-like, I like-like this wine. Serve slightly chilled. 100% Lenswood Pinot Noir, 70% whole bunch, wild yeasts, 30 days on skins, unfiltered & unfined, 10% new & 90% neutral French oak. Brendon Keys is a freethinking frontier wine-maker. His wines are cutting edge, yet they are the very definition of modern Australian quality winemaking. Brendon does do things a bit differently but always with great control and purpose. All BK Wines are from single vineyards and are fermented using wild yeast. All reds are unfiltered and unfined.

Luke Lambert "Crudo" Shiraz 2019

Luke Lambert is a great wine maker with impeccable credentials learnt at some of the world's most prestigious wineries.

All Luke Lambert wines are handpicked and of single-vineyard origin. They are wildly perfumed with moderate alcohol, fresh acidities, powdery tannins, and limited oak influence. These are wines made as if the industrial revolution (in wine) was a figment of our collective imagination. Luke’s methodology includes wild ferments without the aid of temperature control, hand plunging, long macerations (with plenty of whole-bunch for the Syrahs), basket-pressing, gravity rather than pumping, old oak, and no fining or filtration. Lambert’s belief that "..the best wines have always been made by feel and are always sourced from unique and interesting vineyards that have natural balance and grow grapes full of character..." comes through strongly in the remarkable complexity and placeness of these wines. There is no doubt that when it comes to what John Livingston-Learmonth terms STGT (Soil To Glass Transfer), Luke Lambert is one of our most exciting home-grown talents.

Schwarz Wine Co Meta Grenache 2019

The Schwarz Wine Co Meta Grenache 2019 offers a bouquet that is fresh, clean and spicy, with lovely ripe dark cherry notes. The palate is balanced, medium bodied and flavoursome, with just enough tannin on the finish. Hand-picked, wild yeast, 91% whole bunches, unfined, unfiltered. Fruit source: Bethany 75 year-old vines and Marananga 90 year-old vines. Built with freshness and vibrancy in mind, this leaps with wild strawberries and red liquorice with undercurrents of Grenache’s signature sweet boiled candy generosity all elevated by an invigorating menthol lift.
