What we’ve done: A bit of this and that in Margaret River, Swan Valley, Clare Valley, France, Adelaide Hills and McLaren Vale.
How we feel: The overarching idea behind our range of wines is using grape varieties we find intriguing, interesting and drinkable. We make wines stylistically to complement the food we like to eat.
Given our wines are predominantly from single vineyards we want our wines to have a sense of place, be approachable, medium bodied, structural with attention to texture.
Great care is taken to work with people who have grown the best variety for their vineyards. The vineyards are predominantly farmed using organic or biodynamic principles and practices.
Fruit is picked when we have a balance of flavour and natural acidity, followed by cool fermentation, and gentle hand plunging. We don’t believe in working anything hard. Avoid over extraction and keep the additions to a bare minimum. Maturation in old French oak and extended skin contact to create a balanced mouthfeel
We are inspired by the growers who are experimenting with varieties which until recent years haven’t been seen in McLaren Vale before. Some of the Italian varietals in particular are performing outstandingly and are well suited to the Vale’s geology and climatic conditions.
The fruit quality is a winemakers dream.
