Hand harvested, 100% destemmed to show off the purity & class of the fruit. 100% wild yeast ferment for complexity the 20 days on skins to develop extra weight & texture. Followed by a natural malolactic ferment in barrel then 100% French oak maturation adding delicious spice & density. No fining or filtering, wishing to keep all of the goodness in the wine, in a natural fashion which allows for a very fine and true expression of beautiful Pinot Noir.

After hand picking it was pressed to barrel (around 30% new French oak) for wild ferment. No malolactic fermentation was encouraged with this wine to accentuate the acidic drive this part of the Yarra is known for. Made with a light hand and wild yeasts to deliver a full flavoured yet crisp modern Chardonnay. Delicious lip-smacking drinking.

SubRosa “Aristocracy” Shiraz 2015 – $ 42.00
95 Points, James Halliday , “Estate-grown, matured for 16 months in French barriques, neither fined nor filtered. Bright in color and light in body (by Grampians standards). Its mouthfeel, balance and studied length are on another level, with vibrant red fruits, spices and feather-light tannins. ” Crafted with 100% peppery Shiraz from Mt. Cole in the Grampians 16 months maturation in three French barriques. Only 68 dozen produced. No fining or filtration.
