Sustainably viticulture throughout the vineyards is what the vineyard team set out to do from day one.

Cabernet Sauvignon and Merlot parcels were destemmed but not crushed to preserve whole berries. Fermented in open static fermenters with gentle hand plunging and pump overs three times daily. Once pressed off skins, wines were matured in seasoned French oak with periodic racking to aid clarification. A parcel of Petit Verdot was blended to lift the aromatic profile. 12 months in new, 2 & 3 year old French oak. The colour is a Medium dark red. The aroma is of dark berries, spice, bay leaf and dusty cedar. Smooth, juicy, bright, fresh with fine tannins.

Cabernet but not as you know it, early-drinking, juicy and elegant, a nod to the strong coastal influence that defines this distinct style.

Our objective is to achieve environmental balance. To us, this means becoming a wholly-sustainable enterprise. Having started on this dedicated environmental journey in 2004, we continue to learn both through hands on experience and through reviewing the science as it develops.

Our Estate vineyards are currently undergoing transition to organic farming, underpinning our commitment to long-term commitment to sustainable farming.

Presently we have nearly 40 hectares which equates to one third of our vineyard area classified as ‘in conversion’

We are meticulous in everything we do: from site, varietal and clonal selection to vineyard management and winemaking. A combination of organic methods, sustainable principles and the latest in technology create the ultimate balance for our vineyards and soils.

We take an individual approach to each and every vineyard block on our Estate. At every step of the way, we work with the ‘big picture’ in mind, acknowledging the characters that each block will contribute to the final wines.

We follow an intensive “hands on” vine management program in our vineyard – from hand pruning, shoot thinning, yield thinning and green thinning – everything is done with great attention to detail.
